Roasted Kohlrabi

This little golden recipe is quick, easy, and healthy. This member of the turnip family has delicious flavor and is a great healthy alternative to potatoes as a side dish.

Ingredients

1 1/2 pounds fresh kohlrabi
1 tablespoon olive oil
1 tablespoon garlic
Salt
Balsamic Vinegar (or other favorite)

Preparation Directions

1) Preheat oven to 450.

2) Trim ends off of kohlrabi. slice off thick outer skin and dice into bite sized pieces.

3) Toss with olive oil, garlic and salt in a bowl. Spread evenly on a rimmed baking sheet and put into oven and roast for 30 – 35 minutes. After 20 minutes, start stirring every five minutes.

4) Sprinkle with a your favorite vinegar and serve warm.
