Tomato Tortellini Soup
This is a delicious and easy recipe. Great for a nice warm meal in the cold winter months.
2 cloves of minced garlic
2 tablespoons olive oil
1 package (9oz) refrigerated cheese tortellini
1 large can (26oz) condensed tomato soup
2 cups chicken broth
1 1/2 cups milk
2 cups heavy cream or half-and-half
1 can Rotel or diced tomatoes
1 teaspoon onion powder or flakes
2 teaspoons Italian seasoning
1 teaspoon pepper
1/2 cup shredded Parmesan cheese (optional)
Sauté garlic with the olive oil in a large stock pot until slightly brown. Be sure not to burn.
Add tomato soup, milk, half and half, chicken stock and spices. Stir. Bring to a simmer. Once simmering, drop noodles into the soup. Cook according to the package directions, about 8 minutes.
After noodles are cooked, ladle into bowls, top with parmesan cheese (optional), and serve with crusty bread or cornbread.
Enjoy in front of the fire!
